COLORFUL COLORADO POTATOES
Serves 6
This is one of those potato recipes that tastes every bit as good as it looks. It uses red Colorado potatoes, green and red peppers, bacon and yellow corn kernels for color, texture and flavor galore.

Fry ¾ pound of bacon, cut into bite sized squares, in a heavy skillet until just before they get crisp. Add 1/2 chopped bell pepper, 1/2 chopped red pepper, 1 large chopped onion, 6 large red potatoes, cut into bite sized pieces, and salt and pepper to taste.

Cook until just before you can put a fork through the potatoes, then add one small can of whole loose cooked corn. Cook until the potatoes are done (test with fork).

If you have some left over, or you make a double batch, you can fix these Twice-Baked Potatoes. Just add about ½ cup of non-fat sour cream, a little non-fat milk and some shredded cheese and bake until heated through in a casserole dish in a 350 degree oven.
