In the latter part of the 19th century, the San Luis Valley of Colorado became the site of what was to become one of the strongest potato producers in the country. Colorado Potatoes adopted the motto, “Quality at its Peak,” a reference to the stunning Rocky Mountains that surround the valley. The slogan is no empty boast. Colorado potatoes produced in the San Luis Valley are famous for their quality and variety, and are the second-largest supplier in the nation of fresh potatoes.

The valley’s plateau enjoys the perfect combination of altitude and climate for potato cultivation. Potato crop growth is controlled in its fertile soil, which is comprised mainly of loose loam, flexible enough to allow significant growth without stunting the vegetable. Irrigation is almost completely controlled in the San Luis Valley, using industrial sprinklers and water from the alpine runoff.

Potatoes are a genre of night shade plant, but have overcome the deadly stigma to the point where they are now the second most popular food in America. Potatoes are grown the world over and constitute the most popular tuber crop on the planet.

The potato was born some 2,000 years ago in the southern part of Peru, created by the amazing Incas. It is likely that the Peruvian potato was brought back to Europe by the Spanish Conquistadores around 1570, and proceeded to prove its value as a staple and nutritious food crop throughout the European continent. Indeed, on a global level, this versatile underground vegetable has made China famous as the largest producer of potatoes on the planet, with India running a close second.

Surprisingly, there exist over 5,000 varieties of potatoes around the world, and at least half of those varieties can be found in the Andes. Potatoes are readily cultivated and cross-bred to produce different results.

The popularity of the potato around the world is both well established and well deserved. Potatoes contain complex carbohydrates, protein, fiber, vitamins and minerals, all in a convenient and economical package.

Delicious potato recipes are almost as abundant and versatile as the crop itself. The potato can be cooked any number of ways and served with a vast array of other foods and hold its own. In many countries the potato is a primary ingredient for favorite dishes, from stews to scones to pancakes to chips.
