Alturas offers extremely high yields - an average 20-30% more than Russet Burbank and high dry matter content. It looks like it’s got better solids, better yields and lower input costs than Russet Burbank Alturas stores nearly as long as Russet Burbank. While its tubers generally exhibit few external or internal defects, they tend to be short and they do occasionally develop growth cracks. Alturas is excellent for dehydrating and was bred for that purpose, but also makes excellent mashed potatoes. Alturas’ fry color from 45° F storage is much better than Russet Burbank’s and it often fries acceptably following 40° storage.
