Chipeta is a medium- to late-maturing chipping potato released in 1993 by Colorado State University (contact the San Luis Valley Research Center for additional information). It is notedfor its excellent chip color during long-term storage. It is also considered a good baker and has wide adaptability among irrigated growing conditions. Plant emerges quickly; large and erect with many reddish-purple flowers;indeterminate growth habit; deep, spreading root system that helps provide adequate water andnutrient uptake for the large vines. Tubers are white fleshed, oval to round with white to light tan skin; eyes are shallow and well distributed; tubers consistently have high specific gravity 1.094.
