Colorado Potato Breakfast Flatbread Recipe in San Luis Valley, CO

Ingredients:
  • 1 ea Flatbread or Naan Bread 8″ diameter
  • 3/4 Cup Mashed Potatoes, Russet, prepared, hot
  • 1/4 Cup Sausage, Link, Cooked and Sliced
  • 1/4 Cup Sausage, Crumbles, Cooked
  • 1/2 Cup Cheese, Chedder Blend, Shredded
  • 1 ea Tomato, Yellow or Red, sliced
  • 1 ea Egg, Large, fresh
  • 1 Tbsp Parsley, Fresh, Chopped
Directions:
  1. Preheat oven to 400 degrees
    If grilling, pre-heat grill to 375 degrees
  2. Layer as follows
  3. Bread
    1. Mashed Potatoes
    2. Sasuage
    3. Cheese
    4. Tomatoes – Arrange tomatoes in a ring to contain the egg
    5. Egg
  4. Bake at 400 degrees or grill at 375 degrees until cheese is melted and egg is cooked to over easy
  5. Remove from the oven or grill and allow to rest for 2 minutes
  6. Garnish with the chopped parsley
  7. Serve
