Potato & Green Chili Poutine

Colorado Potato & Green Chili Poutine recipes in San Luis Valley, CO

Ingredients:
  • 10 ea Yukon Gold Potatoes, large, french fry cut
  • Oil for frying
  • 3 Cups Pork Green Chili, Prepared
  • 1.5 Cups Gravy, Chicken
  • 1 Pkg – 10 oz Peppers, Mini, Sweet, Sliced
  • 2 Cups Cheese, Chedder Blend, Shredded
  • 6 Tbsp Cheese, Cotija, Crumbled
  • 6 Tbsp Crema, Mexican, Fresh
  • 6 Tbsp Cilantro, Fresh, Chopped

Directions:
  1.  Fry the Yukons gold potatoes and season with salt and pepper
  2. While HOT – layer as follows to make the Colorado Poutine:
    1. French fries – Hot
    2. Chicken Gravy – Hot
    3. Pork Green Chili – Hot
    4. Cheddar Cheese Blend
    5. Cotija Cheese
    6. Crema
    7. Cilantro
  3. Garnish with mini peppers

This dish is very versatile!  You can substitute the following for the green chili:
Red Chili
Chicken Chili
Pot Roast
Fajitas – Beef or Chicken
