Colorado Potato Breakfast Flatbread Recipe in San Luis Valley, CO
Ingredients:
- 1 ea Flatbread or Naan Bread 8″ diameter
- 3/4 Cup Mashed Potatoes, Russet, prepared, hot
- 1/4 Cup Sausage, Link, Cooked and Sliced
- 1/4 Cup Sausage, Crumbles, Cooked
- 1/2 Cup Cheese, Chedder Blend, Shredded
- 1 ea Tomato, Yellow or Red, sliced
- 1 ea Egg, Large, fresh
- 1 Tbsp Parsley, Fresh, Chopped
Directions:
- Preheat oven to 400 degrees
If grilling, pre-heat grill to 375 degrees - Layer as follows
- Bread
- Mashed Potatoes
- Sasuage
- Cheese
- Tomatoes – Arrange tomatoes in a ring to contain the egg
- Egg
- Bake at 400 degrees or grill at 375 degrees until cheese is melted and egg is cooked to over easy
- Remove from the oven or grill and allow to rest for 2 minutes
- Garnish with the chopped parsley
- Serve
