Colorado Potato Salad with Savory Vinaigrette Dressing – Mark Parmley, Theater Chef

This is a light summer perfect recipe for any picnic, barbeque, or meal.


  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons  white wine vinegar
  • 1 tablespoon  chopped fresh flat-leaf parsley
  • 1 clove  garlic, minced
  • 1 tablespoon  fresh summer savory, or 1 teaspoon dried summer savory
  • ½ teaspoon  freshly grounded pepper
  • ¼ teaspoon  powdered mustard
  • Halved  cherry tomatoes for garnish
  • 2-3lb Peeled, cubed, boiled, and cooled of any combination of the following Colorado Potatoes: Russet, Red, Yukon Gold, Purple Majesty, or Mountain Rose


Mix the potatoes and the Vinaigrette Dressing all together.
