Colorado Yukon Potatoes with Cheddar Cheese and Smoked Sausage – Jeremy Glas


  • 2lb Yukon Potatoes, par boiled as for potato salad
  • 1lb Smoked sausage*, sliced
  • ¼ cup sliced shallots or onion, sliced or diced
  • 6-8oz. Sharp cheddar cheese, shredded
  • 2T chives, for garnish


Heat oil in a large skillet and sauté shallot or onion until translucent. Add sausage and potatoes and cook until lightly browned. Add cheese and seasoning and cook until cheese is melted. Garnish with chives and serve hot.
Use only Colorado grown potatoes.
*Sausage used in demo was Elk Jalapeno Sausage from continental Sausage Company in Denver Co.
