Crowder Street Tacos with Saffron Potatoes – Executive Chef Chris Puter

Representing Senator Larry Crowder and House Representative Ed Vigil at the State Capitol’s   Ag Day and Colorado Potatoes was Executive Chef Chris Puter of the Pinehurst Team Chefs. The Colorado Produce Partners were: Colorado Potato Administrative Committee, Colorado Onion Council and Colorado Livestock Association.  In a cook-off Chefs showcased their talents creating recipes featuring produce associated with whom they were partnered.

Ingredients

  • 2 4 1/2″ Corn Tortillas
  • 4 oz Pulled Pork Shoulder
  • 1 oz Caramelized Onions
  • 2 oz  Saffron Roasted Potatoes
  • pinch Micro Cilantro

Instructions

Pork Braised Liquid: water, oranges slice in half, fresh oregano, fresh rosemary, garlic cloves, cumin, onion, chili powder, lime zest.

Caramelized Onions: Julienne onions cooked in butter on low heat stirring often to a nice caramel brown color.

Saffron Roasted Potatoes:  Pell and small dice potatoes par cook potatoes half way in saffron stock (.25 gram Saffron to 1 gallon of water). Remove from stock and finish in a 350 degree oven with butter and chopped garllic til  cooked through. Season with salt and pepper.
