Decadent Mashed Potato Fudge (2014 SLV Potato Festival) – Cheryl & Owen Scherzer with Coloring Outside the Lines Beadstore
Cheryl and Owen won 2nd place in the sweet category with this recipe in the 2014 SLV Potato Festival’s Downtown Taste-Testing Tour.
- 3 ounces semi-sweet chocolate
- 8 ounces cream cheese
- 1/2 cup cooked, mashed, unseasoned San Luis Valley potatoes
- 1/8 teaspoon salt
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- 1/2 cup chopped nuts
Combine cream cheese and chocolate in top of double boiler. When melted, set heat on low and mix in potatoes, salt and vanilla extract. Blend in powdered sugar, one cup at a time. Add chopped nuts and orange zest. Pour into a greased 8″ x 8″ pan. Chill, then cut.
