Farmer’s Cold Tater Soup
Servings: 4-6
Ingredients
- 2-3 Colorado potatoes, diced, peeled
- 2 large Onions, minced
- 2 Leeks, minced (do not use tops)
- 1 quart Water
- 1 cup Chicken stock
- 1 tablespoon Butter blended with 1 tablespoon flour
- 2 cups Hot milk
- Chopped chives for garnish
Instructions
Simmer potatoes, onions and leeks in 1-quart water for 25 minutes or until potatoes are tender. Puree vegetables in blender or food processor. Add chicken stock, butter and flour. Boil mixture for 1 minute. Add hot milk, cool to room temperature, and then chill in refrigerator. Garnish with chopped chives. For richer soup, use half milk and half table cream. Makes 4-6 servings
