French Onion Potato Soup

Ingredients
- 3 medium sweet onions, thinly sliced
- 1/4 cup butter or margarine
- 6 cups water
- 6 chicken bouillon cubes
- 6 Colorado potatoes, cubed
- 1/4 cup dry sherry
- Salt
- Parsley
- French toast rounds
- Parmesan cheese
Instructions
Cook and stir sliced onions in butter until lightly brown. Add water and bouillon cubes. Heat to boiling; add potatoes. Add sherry, salt and parsley. Simmer slowly for about 10 minutes or until potatoes are tender. Serve hot, top with French toast rounds and Parmesan cheese. Makes 6 servings.
