Irish Potato Candy – Timi Earls


  • 1/2 Cup mashed potatoes
  • 1/2 tsp vanilla
  • 1/2 -1 bag powdered sugar
  • 1 crunchy or smooth peanut butter


Mixture should be thick enough to roll out, but not stiff.  (You can use food coloring to color the “dough” any shade you like, depending on holiday/season).

Onto board or cloth dusted with powdered sugar…”roll out mixture 1/2- 3/4″ thick.

Spread generous layer of peanut butter onto potato mixture.  Roll in jelly-roll fashion.

Cut into 3/4″ sections and drizzle with dark chocolate.
