Parmesan Potato Balls

Ingredients
- 3 medium Colorado potatoes, peeled, quartered
- 1/4 cup Grated Parmesan cheese
- 1 1/2 ounces Cream cheese
- 1 tablespoon Butter or margarine
- 1 tablespoon Green onion, chopped
- 2 1/2 teaspoons Instant onion soup mix
- Dash of pepper
- Dash of hot pepper sauce
- 1-2 tablespoons Milk (optional)
- 1 Egg, beaten
- 1 1/2 cups Cornflakes, crushed
Instructions
Boil potatoes 20 minutes, or until tender. Drain and mash. Stir in Parmesan cheese, cream cheese, butter, green onion, soup mix, pepper and hot pepper sauce. Mix well. Add 1-2 tablespoons milk if the mixture seems too dry. Shape into 8 balls. Dip in the beaten egg, and then roll in corn flakes. Place on baking sheet and bake in a 400 degree oven for 10-15 minutes until outsides are crisp and brown.
