Peppermint Potato Candy

Servings: 117 1-inch


  • 3/4 cup Colorado potatoes, mashed ( prepare without milk and butter or margarine)
  • 1 teaspoon peppermint extract
  • 4 tablespoons butter or margarine
  • 7-1/2 cups  powdered sugar
  • 2 cups seme-sweet chocolate chips
  • 1 tablespoon shortening


In a large bowl, beat mashed potatoes, peppermint extract and butter or margarine until blended. Gradually beat in sugar. Press into foil-lined 13×9 inch pan. In the microwave, melt chocolate chips and shortening. Stir until smooth. Spread over potato mixture. Cover and refrigerate ntil set. Using foil, lift candy out of pan. discard foil. Cut candy into 1 inch squares. Store in airtight container.
