Potato Cheese Balls

  • 1cup  Finely shredded Colorado Potatoes
  • 1cup  Finely shredded carrots
  • 1cup  Finely diced onion
  • 1cup  Finely diced celery
  • 3 8oz.  Packages Cream Cheese
  • ½ cup  Butter
  • 1cup  Chopped pecans


Mix all together (except nuts), divide to form two 4inch balls. Place on wax paper then put into a 4inch. bowl. Refrigerate for at least 1 hour. Roll in chopped pecans. Serve with crackers and enjoy.
