Potato Pot Pie

Ingredients

  • 4 or 5 med.  Potates, washed & peeled
  • 1 c. Buttermilk
  • 1/2 tsp.  Soda
  • 1/2 tsp.  Sugar
  • Flour To make a soft dough
  • 1 1/2 c.  Grated cheddar cheese
  • 1 chicken bouillon cube  Dissovled in 1 c. boiling water
  • Flour to make a soft dough

Instructions

Slice the potatoes and place a layer in the bottom of a 2qt. baking dish. Make dough by combining buttermilk, soda, sugar, and flour. Let stand for 10 minutes. Roll the dough until thin on a lightly floured board. Using a pizza cutter, cut the dough into strips 1 in. x 4 in. in length. Sprinkle the potato layer with salt or seasoned salt, then layer with dough, then cheese. Repeat, making sure the last layer is dough. Pour boiling water with bouilin over all,adding more water to cover. Bake in a 350 degree oven until potatoes are tender and crust is lightly brown. Serve with crumbled fried bacon. Makes 4 servings, and recipe can be doubled.
