Potato Refrigerator Rolls


  • 1 c. Milk, scalded
  • 1 c. Mashed potatoes
  • 2/3 c. Shortening
  • 1 pkg. Yeast
  • 1/2 c.  Warm water
  • 1/2 c. Sugar
  • 1 tsp. Salt
  • 2 Eggs
  • 6-8 cups Flour


Put milk in pan, add mashed potatoes & shortening and scald. In a seperate dish, add yeast, water and sugar. When milk mixture is lukewarm, add yeast mixture, salt and eggs. Beat well. Add flour and knead lightly. Place bowl of dough in warm place & let rise. Can be put in refrigerator to use later on. If using right away, let rise, shape as desired, rise again and bake. If taken form refrigerator, remove, let rise, shape, rise again and bake in a 400 degree oven for 15 to 20 minutes.
