Potato Rolls

Servings: 5-6 dozen


  • 3 c. Warm milk
  • 1 pkg.  Yeast
  • 6-7 c. Flour
  • 1 tsp.  Salt
  • 1/2 c. Shortening
  • 1/2 c.  Mashed potatoes
  • 1/2 c.  Sugar


Cream potatoes, sugar, shortening together. Add salt and 1 c. of the flour. Add yeast dissolved in milk. Stir in reaming flour. Do not knead until after after first rising. Cover and let rise until double. Turn out onto floured surface and knead until elastic. Place in greased bowl and let rise again. Punch down and form into rolls of your choice. Place in greased pans and let rise until almost double. Bake in a 375 degree oven for 20-25 minutes. Make 5 to 6 dozen rolls.
