Shortcut Shepherd’s Pie

Ingredients
- 2 T. Butter
- 2 T Flour
- 1 T. Chopped onion
- 1 c. Evaporated milk
- 2 c. Leftover roast beef or lamb
- 4 Potatoes, cooked, mashed, and seasoned to taste
- 1c. Grated cheddar cheese
Instructions
Cook the mixed vegetables according to package directions. Drain and add onion, flour, butter and canned milk. Cook until thickened. Stir in meat and any meat juices there may be. Heat to boiling and turn into a greased 2 qt. casserole. Top the mixture with mashed potatoes and sprinkle grated cheese on top. Put under broiler until the cheese melts. Serve at once.
