Twice Baked Potatoes with Lobster

- 4 large Baking potatoes
- 4 teaspoons Unsalted butter
- 1/2 cup Chopped yellow onion
- 1/2 cup Finely chopped fresh mushrooms
- 2 cups Cooked lobster (or crab) meat
- 1 cup Dry white vermouth
- 1/2 cup Creme fraiche
- Salt and Pepper
