Winter White Turnover


  • 1 Colorado white potatoes
  • 2 qt Water
  • 1/4 cup Honey
  • 1/4 teaspoon  Cinnamon
  • 1/4 teaspoon Salt
  • 1 medium  Granny smith apple-diced
  • 1 package Wonton or egg roll wrappers
  • oil as needed
  • Toppings: 1/2 cup  Cinnamon
  • 1/2 cup Powered sugar or 1/4 cup caramel topping -warm


1-Peel potatoes, dice and cook in boiling water until soft 2-Drain potatoes and place in mixing bowl. Add honey, cinnamon and salt. 3-With electric mixer, whip potato mixture until smooth and fluffy. 4-Fold in diced apple until evenly distributed 5-Lay out wonton or egg roll wrapper. Place 1 tablespoon filing in wonton wrapper or 5 tablespoons in egg roll wrapper, fold up to resemble on egg roll according to package directions. You can freeze these (up to 3 months) at this point and cook to order when desired. 6-Pan fry rolls in hot oil (375 degrees) until golden brown, about 3 minutes per side. Drain on paper towels for a lower fat version, bake in 400 degrees oven until golden brown.
