Roasted Witches’ Fingerlings Recipes in San Luis Valley, CO
This Halloween, why not have a little fun with your favorite potato dishes? This incredibly easy recipe is both spooky and scrumptious, and sure to delight at any gathering!
- 1.5 lbs. fingerling potatoes
- Olive Oil
- Salt & Pepper (to taste)
- Dipping sauce (your choice)
Preheat oven to 425º. Slice potatoes in half lengthwise. Coat with olive oil. Place cut side down on a baking sheet. Cut a thin slice of skin off of one end of each potato, this will be the witches’ “fingernails”. Cut three slices in each potato around the middle, but be sure not to cut all the way through. Season with salt and pepper. Roast in the oven for about 30 minutes, or until the edges are browned and crispy. Serve with sriracha or ketchup to complete the Halloween fun!
