Southwest Potatoes – Danette Winters

Ingredients

  • 6 medium russet potatoes
  • 8 oz diced green chilis
  • 1/4 – 1/2 tsp garlic salt
  • 1/4 – 1/2 tsp cumin
  • 1/4 – 1/2 tsp salt
  • 2oz green onions
  • 10 leaves cilantro for garnish
  • Oil

Instructions

Peel and dice potatoes; fry them in a generous amount of oil until golden brown – drain oil add all other ingredients before the potatoes are completely finished and cook on low until flavors are well blended.  Before serving add chopped fresh cilantro.
